Today is a new day! I am taking control of my health and will be documenting it here.
My name is Kirsten, I am an almost 25 year old single chick living with type 1 diabetes. I was diagnosed 2012 and am still struggling to make a lifestyle change. I always ate healthy meals, only on occasion did I eat pasta or anything fried. I love a yummy salad but I also love sweets. I have a big sweet tooth and that's not a good thing when you're a diabetic.
Growing up I never really had to worry about what I ate, I could eat what I wanted and not work out and I wouldn't gain weight. Now that I take insulin 3-4x a day and I'm getting older, that luxury is gone. In the past year I've packed on about 10-15 pounds. I eat relatively healthy but could improve and most definitely need to hit the gym more often than I do.
I'm here to make a change and I'm documenting it here in hopes to motivate me and keep me on track. Cooking has always been one of my passions and I usually make healthy, low carb meals. Along with cooking low carb meals, I will be taking advantage of the discount I get with the health food company I currently intern with. I will also try to juice once a week. I will be attending barre and pilates classes a few times weekly.
I work full time and I intern 10-12 hrs/week and am in the process of getting my graphic design portfolio and resume ready to start another job hunt. Needless to say, I'm a busy girl so I know it's gonna be hard work but I'm ready to make a lifestyle change!

One egg omelette with onion, only 1 slice of cheese with avocado and salsa verde
Not my prettiest omelette (it's hard with only one egg!) but it sure was delicious!
